Chelsea Powers Adult Division Best of Show
Black Forest Cake

Cherry Syrup:
4 cup cherries-pitted
¾ cup sugar
½ cup water
1 tbsp. cornstarch
Cake:
1 2/3 cup flour
2/3 cup cocoa powder
1 ½ tsp baking soda
1 tsp. salt
1 and ½ cup sugar
2 eggs
1 tsp vanilla
1 ½ cup buttermilk
Filling:
½ cup cherry syrup
½ cup unsalted butter
3 cups powdered sugar
1 tbsp. finely ground coffee
Icing:
2 cups heavy whipping cream
½ tsp. vanilla
2 tbsp. dry milk
2 tbsp. powdered sugar
½ cup shaved dark chocolate
1. Bring cherries, sugar and water to a boil. Reduce heat and simmer 20 minutes or until cherries are softened. Dissolve cornstarch into a splash of water and add cherries, simmering for another 1-2 minutes or until sauce thickens slightly. Remove from heat.
2. Preheat oven to 350º and line the bottom of three 9" round baking pans.
3. Sift dry cake ingredients together and set aside.
4. Cream shortening and sugar. Add eggs and vanilla, mixing well.
5. Add dry ingredients alternately with buttermilk. Mix well.
6. Pour evenly into pans and bake 20 minutes or until a toothpick comes out clean. Cool and remove cakes from pans. Prick each cake with a toothpick and pour ½ cup of the cherry syrup equally among cakes.
7. In a bowl beat butter until light and creamy. Add icing sugar, salt and coffee ground and mix well. If filling is too thick, add cherry syrup until desired consistency is reached.
8. Place one cake onto cake tray and spread half of the filling mixture on top. Spoon an even layer of cherries from cherry syrup on top of filling. Place second cake on top of cherries, spread remaining filling on top and spoon another even layer of cherries. Top with final cake. Cover and place in fridge to allow cherry syrup to soak into cake.
9. On the day you plan to serve the cake, whip the cream until still peaks form. Gently fold in dry milk and icing sugar. Add vanilla. If icing is too thick, add cherry syrup or milk until desired consistency is reached. Spread icing over the cake.
10. Add shaved chocolate and, if desired, additional cherries to the finished cake.
