Homegrown Black Raspberry Pie
Alyssa Corkery, Age 10-18 Division
Crust:
2 C. flour
1 t. salt
2/3 C. + 2 tbs. Crisco
4 to 5 tbs. cold water
Filling:
4 C. fresh black raspberries
¾ C. sugar
3 tbs. cornstarch
2 tbs. cold butter

Preheat over to 425. Cut Crisco into flour and salt until particles are the size of small peas. Sprinkle in water, one tablespoon at a time, tossing with a fork until all of the flour is moistened and pastry almost cleans the side of the bowl. Gather pastry into ball and split into two even halves, shape into round discs. Roll out pastry on flour covered surface until it is two inches larger than inverted pie plate. Layer bottom of pan with first pastry then cut away excess. Combine black raspberries, cornstarch, and sugar. Pour in filling, top with butter slices. Cut vents into top half of pastry. Wet the rim on the bottom pastry. Then lay top pastry over filling, apply pressure along the rim to seal the crusts. Cut away excess pastry leaving approximately 1 cm. around rim for styling. Crimp excess pies in whatever manner desired, sprinkle sugar on to top of pastry and bake for 35 to 45 minutes.



Chocolate Chip Banana Bread
Isabelle Zitelman, Age 0-9 Division

¼ cup butter
½ cup sugar
1 egg
1 + ½ mashed bananas
1 cup flour
½ teaspoon baking soda
¼ cup chocolate chips

Mix all ingredients together; bake in loaf pan for 40 minutes at 350 degrees.



Angel Food Cake
Kristine Dauth, Adult Division

2 tbps. cornstarch plus enough flour to equal 1 cup
¾ cup plus 2 tbsp sugar
12 large egg whites at room temperature
1 ½ tsp cream of tartar
¼ tsp salt
1 ½ tsp vanilla
¾ cup sugar
½ tsp almond extract

Heat oven to 375. Sift flour, cornstarch, ¾ cup plus 2 tbsp sugar. Set aside. Combine extracts and set aside. Beat egg whites, cream of tartar and salt until it forms peaks. Add the other ¾ cup sugar slowly, then beat until stiff peaks form. Beating on low, slowly add flour mixture and extracts. Scrape bowl several times during addition of flour mixture and extracts. Spoon into angel food cake pan. Move knife through batter to remove air. Bake for 30-35 minutes until top springs back when touched. Invert pan until cooled completely. Run knife around outer edge of pan. Invert onto serving platter then run knife under bottom of pan to remove tube section.
